Siberian cuisine

In  the Long Siberian winter the most important thing - not to freeze. For this purpose it's necessary to dress warmly and eat well :) That is why meat is the best choice for it.
Meat food for Siberian Russia is more important than for European Russia. Meat dishes are rather festive food, but here they are everyday. This is due not only to the universal development of animal husbandry, but also to a vital need in the meat food in the harsh climate.


The main meat dish - is beef. Pork and lamb are cooked less frequently. This is due to the religion of Siberia. For example, Tatars and the Old Believers don't eat pork, considering the pig dirty animal because it eats everything. The Siberian restaurants offer bear meat also and other exotic dishes. Traditional Siberian meat dishes: beef stroganoff, steaks, stuffing chicken or pork, cold of tongue, ears and lips, stew meat, meat soup, roast meat, "Kurnik", sausage and cured ham. Pork is usually served with cabbage and beef - with potatoes. Cutlets cooked usually from minced meat and are served with potatoes, pickled pumpkin or apples.

If you have chance to visit the Siberians, there certainly will be homemade pickles on the table: tomatoes in juice, cucumbers, cabbage, pickled mushrooms and mushrooms, pickled butter mushrooms, homemade zucchini caviar, jam taiga berries. Sauerkraut sometimes cooked with cranberries. And, of course, the table is unthinkable without the traditional pies. Pies can be of very intricate shapes and with different fillings: with cranberries, fish, wild garlic, rice, mushrooms and eggs. Traditional drinks are cranberry drink or  juice.
